Roast Veal With Apple Ginger Sauce


Total preparation and cooking time: 1-1/4 hours

» 1½ to 2 lb boneless veal roast

2 teaspoons olive oil
»
1 cup orange juice
» ¼ cup apple, grated
» ¼ cup raisins
» 1 teaspoon cinnamon
» ¼ teaspoon ginger
» ¼ teaspoon nutmeg

1. Heat oven to 325°F.

2. Heat oil in sauté pan and brown all sides of roast.

3. Place roast, fat side up, in roasting pan and pour orange juice over top. Make a paste of the rest of the ingredients and press on the top of roast.

4. Bake uncovered for 1 hour or until 155°F internal temperature. Let stand for 15 minutes and slice thin.

Makes 4 servings

Tips:
*
A veal loin roast would be an excellent choice.
*Use a meat thermometer. Insert into the center of the thickest part, away from the bone, fat and gristle.
*Serve with rice. Garnish with slices of orange, apple or other seasonal fruit
