BBQ Veal

Total preparation and cooking time: 2-1/4 hours

» 3 to 4 pound well-trimmed boneless veal breast
» 1 large sweet onion, sliced, separated into rings

1½ cups prepared barbeque sauce (divided into 1 cup and ½ cup)
»
6 crusty hoagie-style rolls, (each approx. 7 inches long), split, warmed

1.  Heat oven to 325ºF.  Place 28 x 18-inch piece of heavy duty aluminum foil in roasting pan; place veal roast in center of foil.  Top with onions and ½ cup barbeque sauce.  Bring two opposite ends of foil up over veal; seal with double fold.  Seal ends of foil to close.

2.  Bake in 325º oven 1¾ to 2 hours or until veal is tender.

3.  Remove veal; trim fat and carve crosswise into thin slices.  In saucepan, heat 1 cup pan juices with onions and remaining barbecue sauce over medium-low heat.  Add veal to sauce and heat until hot.  Serve in rolls.
