Citrus-Rubbed Veal Chops with Mango/Strawberry Salsa

Total preparation and cooking time: 25 minutes                                                                                                     

» 6 well-trimmed veal loin or rib chops, cut 1 inch thick (approx. 8 ounces each)                                          
»
½ teaspoon salt
»
½ teaspoon grated lime peel or orange peel
» 2 avocados, peeled and sliced
» Fresh mint sprigs (optional)

Mango/Strawberry Salsa:
» 1 large mango, peeled, seeded, cut into 1/2-inch cubes
» 1 pint fresh strawberries, stemmed and large dice
» ¼ cup green onion
» 2 tablespoons lime juice
» 1 1/2 tablespoons crushed red pepper flakes
» 1/4 tablespoon cumin
» 1/4 cup fresh mint, diced
» Lime zest from 2 limes
» Salt and Pepper to taste

1. In medium bowl, combine salsa ingredients. Cover and refrigerate until serving time.

2. Combine salt, lime peel and chopped mint; press evenly onto both sides of veal chops. Place chops on grid over medium, ash-covered coals. Grill, uncovered, 12 to 14 minutes until veal is medium doneness, turning occasionally.

3. Serve chops with salsa and slice of avocados.   Garnish with mint, if desired.

Makes 6 servings (serving size: 1 chop and 1/2 cup of salsa).
