Grilled Veal Chops With Fruit Salsa


Total preparation and cooking time: 25 minutes

» 6 well-trimmed veal loin or rib chops, 1 inch thick (8 oz)
» 1 tablespoon olive oil
» 2 tablespoons chopped fresh cilantro or basil
» Salt and freshly ground white pepper (optional)

Fruit Salsa:
»
1 small ripe papaya, peeled, seeded, cut into 1/2 inch pieces
» 1 ripe nectarine, pitted, chopped
» 2 tablespoons finely chopped red bell pepper
» 2 tablespoons chopped fresh cilantro or basil
» 1 jalapeno pepper, seeded, finely chopped
» 1 small green onion, thinly sliced
» 1 tablespoon olive oil

In medium bowl, combine salsa ingredients; set aside.

2. Lightly brush veal chops with oil; season with salt and white pepper, if desired. Sprinkle cilantro on both sides of chops. Place chops on grid over medium ash-covered coals. Grill uncovered 12 to 14 minutes for medium doneness, turning occasionally. Serve with salsa.
