Grilled Veal Burgers With Jicama Relish


Total preparation and cooking time: 30 minutes


Grilled Veal Burgers:
»
1 lb. ground veal
» 1 tablespoon finely chopped fresh thyme leaves
» 1 tablespoon balsamic vinegar 
» 1 clove garlic, crushed
» 4 slices (1/2" thick) Italian bread, toasted
»
lettuce leaves

Prepare Garlic Mayonnaise and Jicama Relish according to instruction below.

In medium bowl, combine veal, thyme, vinegar, garlic, 1/4 teaspoon salt and 1/4 teaspoon pepper, mixing lightly but thoroughly.  Shape into four 1/2” thick patties.  Place patties on grid over medium, ash covered coals.  Grill, uncovered, 10-12 minutes or until centers are no longer pink, turning once.

3. Spread each toasted slice with garlic mayonnaise.  Top with lettuce and burger.  Garnish each burger with jicama relish.

Jicama Relish:
»
1/4 cup chopped, pitted Kalamata or ripe olives
» 1/2 pint each of red and yellow pear tomatoes cut in quarters
» 1 Jicama peeled and sliced
» 1/2 cup red onion, diced
» 2 oz. olive oil
» Salt and Pepper to taste

In a small bowl, combine olive, tomato and the remainder of ingredients.  Mix well.  
Relish will be used to garnish burgers after grilling.

Garlic Mayonnaise:
» 1/4 cup mayonnaise
» 1 tbsp balsamic vinegar (optional)
» 1 clove garlic, crushed

In a small bowl combine mayonnaise, vinegar and garlic.  Mix well.  
Spread garlic mayonnaise on Italian bread before serving.

Makes 4 servings
